Ingredients:

This recipe makes approximately 4 pounds of boudin.

  • 2 pounds pork shoulder, ground
  • 1 pound pork belly, ground
  • 1 large onion, chopped
  • 2 green bell peppers, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cayenne pepper (adjust to your spice preference)
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon thyme
  • 1/4 teaspoon oregano
  • 1 cup long-grain rice, cooked
  • 1/2 cup chicken broth

Instructions:

Step 1: Sauté the Vegetables:

In a large skillet, sauté the onion and bell peppers until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic.

Step 2: Combine Ingredients:

In a large bowl, combine the ground pork shoulder, ground pork belly, sautéed vegetables, rice, chicken broth, and all the spices. Mix thoroughly until everything is evenly distributed. Use your hands to really get in there and make sure the rice is well incorporated.

Step 3: Stuff the Boudin:

If using natural casings, soak them in warm water for at least 30 minutes before stuffing. You can also use sausage casings or even bake the mixture in a loaf pan if you prefer. A sausage stuffer makes this process easier, but you can also use a large zip-top bag and carefully pipe the mixture into the casings.

Step 4: Cook the Boudin:

There are several ways to cook your boudin. For the best results with natural casings, simmer the boudin in boiling water for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C). Alternatively, you can bake the boudin in a preheated oven at 350°F (175°C) for about 45-60 minutes, or until fully cooked. If baking in a loaf pan, reduce cooking time as needed. Use a meat thermometer to ensure it's cooked through.

Step 5: Serve and Enjoy!

Once cooked, let the boudin cool slightly before slicing and serving. This delicious homemade sausage is fantastic on its own, with rice and gravy, or as part of a larger Cajun feast.

Tips and Variations:

  • Spice it up: Add more cayenne pepper or a dash of your favorite hot sauce for extra heat.
  • Add some flavor: Experiment with other herbs and spices, such as celery seed, or a pinch of nutmeg.
  • Use different meats: Substitute some of the pork with ground chicken or turkey for a leaner version.
  • Make it vegetarian: Replace the pork with a hearty vegetarian sausage substitute and adjust seasonings as needed.
  • Meal prep friendly: This boudin freezes well. Cook it, cool completely, then portion and freeze for easy quick dinners.
