Ingredients:

  • 3 lbs beef chuck roast, cut into 2-inch cubes
  • 1 large onion, roughly chopped
  • 4 cloves garlic, minced
  • 2 dried ancho chiles, stemmed and seeded
  • 2 dried guajillo chiles, stemmed and seeded
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • ½ teaspoon cayenne pepper (or more, to taste)
  • 2 bay leaves
  • 4 cups beef broth
  • 2 cups water
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • Corn tortillas, for serving
  • Optional toppings: chopped cilantro, onions, lime wedges, salsa

Instructions:

Step 1: Prepare the Chiles

In a large bowl, cover the dried chiles with boiling water. Let them soak for at least 30 minutes, or until softened. Once softened, drain the chiles and remove any stems or seeds that remain.

Step 2: Sauté Aromatics

Heat olive oil in your Instant Pot on the "Sauté" function. Add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Step 3: Blend the Chile Paste

Transfer the rehydrated chiles to a blender along with the sautéed onion and garlic, oregano, cumin, cayenne pepper, and about 1 cup of the beef broth. Blend until completely smooth.

Step 4: Cook the Birria in the Instant Pot

Add the beef cubes to the Instant Pot. Pour the blended chile paste over the beef. Add the remaining beef broth, water, apple cider vinegar, and bay leaves. Season generously with salt and pepper.

Stir everything to combine. Secure the Instant Pot lid and set the valve to "Sealing." Cook on high pressure for 60 minutes, followed by a 20-minute natural pressure release. Then, carefully quick release any remaining pressure.

Step 5: Shred the Beef

Once the pressure is released, carefully remove the beef from the Instant Pot and shred it with two forks. Skim off excess fat from the cooking liquid. Return the shredded beef to the pot and stir to coat it with the flavorful sauce.

Step 6: Serve and Enjoy!

Serve the Birria hot in corn tortillas. Garnish with your favorite toppings like chopped cilantro, onions, lime wedges, and salsa.

Tips for the Best Birria:

  • Don't skimp on the chiles: The chiles are the key to the authentic flavor of Birria. Use high-quality chiles for the best results.
  • Adjust the spice level: If you prefer a milder birria, reduce the amount of cayenne pepper. For extra heat, add more.
  • Make it ahead: Birria tastes even better the next day! You can make it ahead of time and reheat it gently before serving.

Variations:

  • Birria Tacos: Serve the shredded beef in warm corn tortillas for delicious birria tacos.
  • Birria Quesadillas: Fill tortillas with the shredded beef and cheese, then grill or pan-fry until golden brown and the cheese is melted.
  • Add other vegetables: Feel free to add other vegetables like carrots, potatoes, or bell peppers to the Birria.
