Instructions:

  1. Sauté: Set your Instant Pot to the "Sauté" function. Add olive oil, then sauté the onion and garlic until softened, about 3-5 minutes.
  2. Add Chicken: Add the chicken breasts to the pot and cook until lightly browned on all sides.
  3. Pressure Cook: Add crushed tomatoes, diced tomatoes, chicken broth, spinach, oregano, basil, salt, and pepper. Stir well to combine. Secure the lid and set the valve to "Sealing." Cook on high pressure for 10 minutes, then allow for a natural pressure release for 10 minutes followed by a quick release of any remaining pressure.
  4. Blend (Optional): Carefully remove the lid. You can use an immersion blender to partially or fully blend the soup to your desired consistency. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches (be cautious of hot liquids!).
  5. Serve: Serve hot, garnished with fresh basil or a sprinkle of Parmesan cheese (use sparingly).
