Ingredients:

  • For the Birria:

    • 3 lbs beef chuck roast, cut into 2-inch cubes
    • 1 large white onion, roughly chopped
    • 4 cloves garlic, minced
    • 2-3 guajillo chiles, stemmed, seeded, and soaked in hot water for 30 minutes
    • 2 ancho chiles, stemmed, seeded, and soaked in hot water for 30 minutes
    • 1 pasilla chile, stemmed, seeded, and soaked in hot water for 30 minutes
    • 2 teaspoons dried oregano
    • 1 teaspoon cumin
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon cayenne pepper (or more, to taste)
    • 1 tablespoon olive oil
    • 4 cups beef broth
    • 2 cups water
    • 1 cup orange juice
    • 2 bay leaves
    • Salt and pepper to taste
  • For the Consommé (optional dipping broth):

    • 1 cup of the cooking liquid from the Birria (reserve before adding cornstarch)
    • 1 tablespoon cornstarch
    • 2 tablespoons water
  • For Serving:

    • Corn or flour tortillas
    • Chopped cilantro
    • Chopped white onion
    • Lime wedges
    • Cotija cheese (optional)

Instructions:

Preparing the Birria:

  1. Blend the chiles: Once softened, drain the chiles and blend them with the garlic, oregano, cumin, smoked paprika, and cayenne pepper until smooth. Add a little bit of the soaking water if needed to achieve a paste consistency.

  2. Sear the beef: Heat the olive oil in your Dutch oven over medium-high heat. Season the beef cubes generously with salt and pepper. Sear the beef in batches until nicely browned on all sides. Remove the beef from the Dutch oven and set aside.

  3. Sauté the onion: Add the chopped onion to the Dutch oven and cook until softened, about 5 minutes.

  4. Combine and simmer: Stir in the blended chile paste and cook for 1 minute. Return the seared beef to the Dutch oven. Pour in the beef broth, water, orange juice, and bay leaves. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for at least 2 hours, or until the beef is incredibly tender. You can also cook this in a slow cooker on low for 6-8 hours.

  5. Shred the beef: Once the beef is cooked through, remove it from the Dutch oven and shred it using two forks.

  6. Prepare the Consommé (optional): In a small bowl, whisk together the cornstarch and water until smooth. Remove about 1 cup of the cooking liquid from the Dutch oven (before adding the shredded beef back in). Stir in the cornstarch mixture and return to the Dutch oven. Simmer for a few minutes until slightly thickened.

Assembling the Tacos:

  1. Warm the tortillas: Warm your tortillas according to package directions. You can warm them on a dry skillet, in the microwave, or even in the oven.

  2. Fill the tacos: Add the shredded beef to the consommé (if using), letting it absorb some of the flavorful broth. Fill each tortilla with the Birria, and top with cilantro, onions, lime wedges, and Cotija cheese (if using).

Tips and Variations:

  • Spice Level: Adjust the amount of cayenne pepper to your preferred spice level.
  • Beef Choice: You can substitute other cuts of beef, such as brisket or short ribs. Just adjust the cooking time accordingly.
  • Slow Cooker Option: This recipe works beautifully in a slow cooker. Follow steps 1-3, then transfer everything to your slow cooker and cook on low for 6-8 hours.
  • Make it ahead: The Birria can be made a day ahead of time. Store it in the refrigerator and reheat before serving.
